CHICKPEA CAKE
  • 250 gm of chickpea flour
  • 1 pinch each of baking soda and baking powder
  • 1 pinch of ground cinnamon
  • ¼ cup pure coconut oil
  • 1 cup sugar free almond milk
  • Few drops of lemon juice
  • 2/3 cup mashed fruit (like banana, strawberries or your pet’s favourite fruit)
  • 1 cup plain Greek yogurt.
  • Preheat oven at 350 F

Sift the chickpea flour, baking soda, and ground cinnamon in a small bowl. Now pour all the wet ingredients into another bowl. Whisk and make it smooth. Add the wet ingredients into the dry, fold in mashed fruit. Pour into a 7 inch round tin that is lined with parchment paper. Bake for 30 minutes. Let it cool and place it inside the fridge to set for 30 minutes.

Now slice the cake into two and apply a layer of Greek yogurt as frosting.

APPLE AND BANANA CAKE
  • ½ cup grated apple
  • 1 small mashed banana
  • 1 pinch baking powder
  • 1 cup almond flour
  • ¼ cup unsweetened apple sauce
  • ¼ cup water
  • Preheat the oven to 350 F

Mix the grated apple, apple sauce and mashed banana in a small bowl. Now stir in the water and flour. Take a pan and use coconut oil to grease it. Now pour the mixture into the pan and bake for about 20 to 25 minutes or until the center has become firm.

Decorate with apple and banana slices.
